In enjoying a fine meal, wine has traditionally been the beverage of choice to compliment and enhance the unique flavors of professionally prepared food. At Jackalope's View, we have prepared a list of wines that will complete your dining experience with us. From French Burgundies to Australian Cabernets, the wines on this list are organized by varietals but within each varietal they are not placed in any order or by priority of price. We have two 700 bottle cellars so that we can ensure the quality of the wines that we have to offer.

Also new at Jackalope's View is our wine keeper selection, now totaling 24 wines, which lets us bring some of our nicer bottles to you by the glass.

Sauvignon Blanc - Fume Blanc
Sauvignon Blanc is a medium dry white wine.  It is sometimes called fume
Blanc because one winemaker once bottled it as such.  “Fume Blanc” means
white smoke, hence a light white wine.  It is traditionally paired with mild
shellfish, lightly seasoned vegan dishes, and broiled fish.  Flavors of
citrus and fresh herbs are typical.

Chardonnay is the driest style of white wine.  Its range of flavors and
aromas vary depending on vintner’s style and the grape appellation.  It is
complimentary to heavy cream sauces, poultry, and hearty fish.  Chardonnay

White Burgundy
Grown in the burgundy region of France, these white wines were the models
for new world
Chardonnay.  They are 100% Chardonnay grape, though French labeling does not
denote such distinction.  Compared to the previous page of Chardonnay
listings, these wines will be more refined in taste profile and texture.
White Burgundies are dry, elegant and delicately layered with apple, spice,
and subtle hints of oak.  Chardonnay enthusiasts should pamper themselves

Pinot Noir
This delicate red grape means “small black” signifying the physical
description of the grape.  The wine is light yet very distinct.  It
generally yields flavors and aromas of bing and black cherries, cassis and
plum. It is an excellent paring with lamb, veal, and spicy cuisine.  Pinot
Noir is a difficult grape to harvest, and very dependent on weather
conditions.  Though many producers bottle pinot noir, great
Pinot noir is limited.

Red Rhone
Divided into the Northern and Southern Rhone this region’s climates and
varying soil produce completely different style wines.  Red Rhone wines rely

Red Zinfandel
The only grape native to the Americas, Zinfandel is a dark black grape
capable of producing very hearty wine. Vinted in it’s traditional style,
however, zinfandel is a medium-bodied, dry red wine.  It is often spicy with
flavors of currant and cherry.  Particularly good with wild game, blackened
or grilled meats, and vegan dishes.

Merlot
A traditional Bordeaux grape now bottled independently.  Merlot has
wonderful jam like fruit flavors of blackberry, blueberry, and raspberry.
Depending on the time spent oak aging, Merlot can be very dense and layered.
It is smooth, almost velvety, with mild to medium tannins.  It is excellent
with meat and poultry dishes.

Meritage is California’s answer to France’s Bordeaux.  These wines are
blends of the five traditional grape varieties that make up Chateau wines.

Pinot Grigio / Pinot Gris
Pinot Gris can be deeper in color than most white wines.  Pinot Gris is

New Zealand
New Zealand wines are rated throughout the world as the definitive benchmark
style for most varietals. The growing recognition for New Zealand
Chardonnay, Pinot Noir, Méthode Traditionelle sparkling wines, Riesling,
Cabernet Sauvignon and Merlot blends is helping to further cement New
Zealand's position as a producer of world class wines For many years the
wine industry has been aware of the shortcomings associated with the use of
cork as a seal for bottled wine.  A small percentage of wine was ‘corked’ –
spoiling the taste and occasionally rendering the wine undrinkable.  An
undetermined volume of wine was tainted by the cork seal to a varying
degree – sometimes not detected, or sometimes contributing to an opinion
that a wine was not of good quality.  This is the reasoning for most of New
Zealand wines to be “screw top” lids.
